The Dominican Kitchen’s Staple

haven’t written about Latin culture in a while. I thought I’d write about something we all used in the kitchen. The pilón is used for making good mofongos (kind of like mashed potatoes but instead of potatoes it’s plantain…pronounced pla-tin) My Mami also used it for mashing up seasonings to put in the food. She liked to get those small peppers, I don’t know what they are called, put a few garlic cloves in it and some salt and grind it up. Those were one of my chores growing up. My earliest cooking memories involved this pilon or mortar. I have one in my kitchen. Of course it’s used only for decoration. I found it in a trip to NYC for cheap. It’s very authentic: wood with the matching grinder. It gives my kitchen a little Spanish flair. And it goes great with my palm trees that I have in my kitchen.
