As a busy working mom, it’s hard for me to take time out for healthy lunch options but I try my best! There are so many healthy lunch ideas that I can take to work, but I honestly don’t have time to meal prep. I can barely get a weekly dinner menu together!
Because I don’t have the time to meal prep, I have limited lunch options. Drive thru is not a healthy alternative and can get boring quick! So can frozen meals, my other alternative. Sometimes those frozen meals can pack a lot of sodium! So I need something easily portable, that I don’t have to prep beforehand that is a better alternative than a frozen meal. Sounds like I’m asking for a lot right?

I went to my nearest Wegman’s store to find elevAte salad. I LOVE Wegman’s and I live and work close to a Wegman’s location. This is where I buy my weekly groceries so it’s easy for me to pop in and grab something for lunch during the work week. Also there’s a salad for almost every day of the week. The choices are all organic and are:
- Sunny Caesar
- Nutty Cranberry
- Southwest Salad
- Spinach Pow
I had my heart set on Nutty Cranberry but it was sold out at the Wegman’s by work. You can find them in the produce section by another similar brand of salads. So I purchased two of the Southwest Salad. It was my second choice mostly because I don’t like corn (don’t judge me!) but once I opened the salad I realized that all the veggies that go along with the salad are all separate so if you, like me, don’t like corn, you don’t have to include it in the salad. I ended up including it to see if I would like it or not.
When I was looking at the salad, I thought to myself wow, all I need is a fork. But guess what? There was a fork peeking through the lettuce in the bowl! All you really need is to make sure you keep it cool until you are ready to chow down. It really doesn’t get any more convenient than that.
This salad was so yummy. I had just enough dressing and it had a sweet touch to it. I ate everything, even the corn. Ok….I inhaled it. Bonus: 7g of protein and 240 calories, it keeps me full without going over my calories for the day. Because this mami needs to be healthy for her babies. This convenient option also makes it easier for me to eat healthy while on the go.
